Potato soup

  • 1 zucchini cut in cubes
  • 1 bundle of spring onions
  • 1 bundle of parsley
  • 1 bundle of anise
  • 1 onion
  • 2 tablespoons of  butter
  • 1 liter of beef broth
  • 600gr. Cyprus potatoes
  • Salt, freshly ground pepper, nutmeg
  • 100ml milk or whipped cream

 

Peel the potatoes and cut in cubes. Chop the anise, the spring onion, the parsley and the onion and saute them in butter. Add the potatoes and the zucchini with the broth and some salt and let them boil for at least 20 minutes, until the potatoes get tender in the casserole. Add some pepper, nutmeg and the milk and let the soup boil for another 10 minutes.
