- 600gr. peeled Cyprus potatoes
- 1 onion
- 2 eggs
- 1-2 tablespoon of flour
- Salt, pepper
- 1 tablespoon of chives
- Oil for the frying pan
- 200gr. smoked salmon
- Lemon broth
Grate the potatoes and the onions and mix with the eggs, the flour, the salt, the pepper and the chives. Pour enough oil in a frying pan and fry the mini tarts until golden brown. Place them on kitchen towel to absorb the oil. Cut the salmon in small pieces, salt, sprinkle with lemon and garnish.
