Potato strudel with chives and spring onion

  • 400gr. Cyprus potatoes
  • 1 puff pastry
  • 1 tablespoon of  butter
  • Salt, nutmeg
  • 1 egg
  • 2-3 chopped spring onions
  • 1 bundle of chopped chives
  • 1 yolk

 

Peel, cut and boil the potatoes for 25 minutes in salted water.

Strain and melt immediately, adding butter, salt, nutmeg, the spring onions, the chives and the egg.

Preheat the oven at 200οC. Open the puff pastry with a rolling pin and place the potato filling. Fold the edges and roll. Place on buttered baking pan, spread with the yolk and bake for approximately 25 minutes until golden brown.
