Potato croquettes with haloumi and peppermint (4 persons)

  • 800gr. Cyprus potatoes
  • 200gr. grated haloumi
  • 2 yolks
  • 2 tablespoons of chopped peppermint
  • 20gr. soft butter
  • 2 whites of egg
  • 2 tablespoons of flour
  • 100gr. rusk
  • Salt, freshly ground pepper, nutmeg
  • Oil for frying


Peel the potatoes, cut in 4 and boil them for 15-20 minutes. Strain the potatoes and mash them with a hand blender, add the yolks, the nutmeg, the pepper and the salt, the haloumi and the peppermint. Mix well, shape a stripe with the potato dough and cut the croquettes per 5 centimeters. Stir the whites of egg, put the flour and the rusk on different deep plates and pass the croquettes first from the flour, then from the white and the rusk. Fry the croquettes in very hot oil until golden brown.
